A chevre cheese from Burgundy with a soft, moist, and creamy texture, and a mildly tangy flavor.
Also called Jack cheese, this is a cow's milk cheese that is often sold unaged. It's ivory in color, semi-soft in texture, and mild in flavor. It has a high moisture content and melts well. Aged Monterey Jack is yellow in color, firmer in texture, and sharper in flavor, with a lower moisture content.
A sandwich consisting of slices of cooked chicken or turkey, cheese (Swiss or Gruyere), and ham. The entire sandwich is dipped in an egg batter and grilled or fried until golden brown.
A Mediterranean dish of poached or fried fish covered in an acidic marinade, refrigerated for a number of hours before serving (usually as an appetizer).
